This December, three of Mexico City’s top chefs take over the kitchens of three Vancouver restaurants to share the flavours of their native land.

During Sabores CDMX (Flavours of Mexico City), Vancouverites will be able to sample regional dishes native to Mexico at some of their favourite restaurants around town.

The Sabores CDMX venture was created by the Mexico City Tourism Trust to increase awareness of culinary tourism to Mexico City. Successful Sabores CDMX events have previously been held in Houston and Minneapolis, and because of its reputation for culinary creativity, Vancouver was chosen as the location for the Canadian launch.

Sabores CDMX is taking place in Vancouver December 8th through 10th. Chef Andrea Carlson’s Burdock & Co. will host Chef Mario Espinosa; Cacao’s Chef Jefferson Alvarez will cook with Chef Gerardo Vázquez Lugo; and Chef Tret Jordan will share the kitchen at Homer Street Cafe and Bar with Chef José Manuel Baños.

Each Mexican chef will serve a set menu for all three nights on December 8th, 9th, and 10th. The chefs are bringing special ingredients to create authentic yet modern dishes that pay tribute to their heritage — think bean soup with fried tortilla,  mole with duck confit, and more.

He returned to Mexico and opened his first restaurant, the award-winning Pitiona Cocina de Autor, and followed this success in 2015 with a second venture, Aguamiel, a traditional Oaxacan tlayudería.
